The Wine: Zillamina Spanish White Wine 2022
The wine, crafted from Macabeo and Airén grapes grown in a certified organic limestone vineyard, undergoes a gentle crushing and low-temperature maceration to accentuate the varietals' aromas. Following this, the "flor" or free-run juice ferments in tanks over up to 30 days at controlled temperatures. It's then prepared for bottling with vegan-certified light fining and filtration, plus a minimal sulfur addition. Characterized by a brilliant, pale-straw hue, the wine exudes apple and citrus aromas, offering a refreshing, lively, and fruity palate with a clean, citrusy finish. It pairs wonderfully with vegetable rice, fish, and white meat.

Zillamina is a collaboration between Jenny & Francois and Bodegas Pinoso, located in Pinoso within the Alicante Denominación de Origen in Spain, embodies the essence of organic winemaking. Since 1997, their vineyards have been certified organic by both the USDA Organic and the Valencia Organic Agricultural Committee. The winery focuses on nurturing limestone-rich soils to cultivate its main grape varieties: Monastrell, Macabeo, and Airén.
